Summer Corn Salad

Summer corn saladIngredients:

2 ears of corn (boiled and shaved off)
2 persian cucumbers, sliced and quartered
1/3 chopped red onion
1/2 chopped green bell pepper
basil leaves loosely chopped
crumbled feta
2 tbsp. cumin
cracked pepperDressing: 2 tbsp. olive oil, 1 tsp. balsamic vinegar, juice from half a lemon, 1 tsp. veganaiseMix all the ingredients together, sprinkle cumin over top of salad, dress and toss!p.s. I found this great the next night with black beans on the bottom of the bowl, then avocado and sliced grilled on top. Great and healthy for at least 2 dinners!
