Healthy Orange Chicken Bowl

Ingredients:

Skinny Orange Chicken* 2 lbs boneless, skinless organic and free range chicken breasts
* olive oil
* green onions
* ½ C orange juice
* ½ C local honey
* ⅓ C soy sauce
* ¼ C rice wine vinegar
* 3 tbsp. cornstarch
* 3 minced cloves garlic
* ½ tsp ground fresh ginger
* ½ tsp pepper
* zest of one orange
* dash of red pepper flakes
* 1 C white quinoa
* 2 C organic chicken broth

Directions:

Cook quinoa according to package, using chicken broth instead of water. In a large frying pan, saute the chicken (cut into cubes) with the olive oil (about 2 tbsp). Season to taste with salt and pepper. Make orange sauce- In a mixing bowl, whisk together orange juice, honey, soy sauce, rice wine vinegar, cornstarch, garlic, ginger, pepper, orange zest and red pepper flakes.

When the chicken is just cooked through, add the orange sauce into the frying pan. Stir constantly for a minute or two until thickened. Serve immediately in a bowl over the quinoa. Garnish with chopped green onions.

Voila! Dinner. Asian-style.
